Head Chef

About the role
Shoalhaven Entertainment Centre is the Shoalhaven’s premier entertainment venue. As the Head Chef, you will work a 38-hour week (fortnightly roster) balancing multiple outlets including conference catering, dining service for shows and our café and show bar. This opportunity provides ongoing training and allows you to gain recognition for your talents, showcasing local produce, creating a dining experience for the food loving clients of the Shoalhaven.

Duties
Reporting directly to the Food, Beverage, & Events Coordinator, the focus of this position is to:

  • Responsible for the entire kitchen operation, this includes rostering, recruitment, costing, staffing, stock rotation, stock ordering and menu design.
  • Responsible for all food preparation and delivery.
  • Fully responsible for all general cleaning duties required in the Centre’s kitchen to the required industry legislation standards.
  • Excellent knowledge and compliance with required health standards for the handling of food.
  • Communicate and liaise appropriately with internal and external customers.
  • Demonstrate a high level of commitment to quality performance in all work performed to support Council’s goal of achieving continued improvement.
  • Be responsible for and coordinate your own and your kitchen staff’s work and work area.
  • Work collaboratively with others in the workplace and show a strong ability to train and guide staff.

Skills & Experience
To be successful in the position, you will be/ possess:

  • Certificate III or equivalent qualification in Commercial Cookery or related field
  • Minimum 2 years’ experience in a Head Chef or similar Role
  • Class C Driver’s Licence
  • Working With Children Check
  • Food Safety Supervisor Certificate
  • Proof of Australian residency or citizenship, or authority to work in Australia (visa)

The advertised salary includes up to $408 per week above the base salary for an outstanding candidate.
